Located on the Culinary Institute of America’s
(CIA’s) Greystone campus in the heart of the Napa Valley,
the late nineteenth century Gatehouse is undergoing preservation
and restoration as a functioning research center, The Chuck Williams
Flavor Discovery Center. The center’s focus will be to educate
visitors about the flavors of food and beverage and also to serve
as a laboratory for food professionals.
ARG designed the food research
facility, which includes a 32-seat dining room and a state-of-the-art
professional kitchen. ARG’s adaptive reuse of the historic
building preserves the dining room’s original stonewalls,
while incorporating modern equipment. ARG’s scope of work
also includes a seismic retrofit, new mechanical systems, and interior
design.
